Here’s what you’ll need to make these family-friendly mini casseroles.
Pillsbury™ Flaky Layers Buttermilk Biscuits: Biscuits create the tender, flaky base of the mini casseroles.
Beef: Ground beef is the hearty backbone of the casserole filling. The fat content helps keep the meat juicy and flavorful once mixed with the sauce, so don’t use beef leaner than 80%.
Sauces: Barbecue sauce, ketchup, and yellow mustard provide sweetness, acidity, and a bit of smoke to the beef mixture, rounding out the flavor of the filling and cutting the richness of the beef.
Tater Tots™: Tots give these mini casseroles a kid-friendly crispy topping the whole family will love.
Cheddar Cheese: Cheddar melts and browns over the tater tots for a gooey finish. Mozzarella or Jack cheese would also be delicious if you prefer another cheese.
Here’s how to make these easy and satisfying mini casseroles. Follow the recipe for details!
Separate the biscuits and press each one into a muffin cup, pressing all the way up the sides.
Cook the beef, drain if necessary, and add the sauces.
Fill each muffin cup with the beef mixture, then top each mini casserole with Tater Tots and cheese.
Bake the mini casseroles until hot and golden brown. Serve hot and enjoy.
If you have any leftover mini casseroles, here’s how to store and reheat them.
Refrigerate any leftover casseroles in an airtight food storage container or resealable food-storage plastic bag for 3 to 4 days.
We don’t recommend storing these mini casseroles in the freezer since the biscuit dough and tots can become soggy when reheated.
To reheat refrigerated mini casseroles, transfer to a foil-lined baking sheet, and heat in a 350°F oven for 10 to 15 minutes or until the filling is at least 165°F (use a food thermometer) and the potato puffs are crispy. If the tots become too brown during reheating, tent them with foil.

Top each cup with 3 Tater Tots; sprinkle each with cheese.

Bake 15 to 20 minutes or until Tater Tots and biscuit cups are golden brown.
For a flavor twist, add 1 cup frozen corn to the beef mixture before spooning it into the biscuit cups.
