These Jalapeño Cheddar Waffle Melts are the perfect easy dinner for any night of the week! With gooey cheddar cheese, mildly spicy jalapeño, and your favorite taco toppings, these melts are a fun and family-friendly meal that even kiddos can enjoy. It’s important to preheat your waffle maker for even cooking. Waffle makers without a nonstick coating should be sprayed with cooking spray before the biscuit is added to avoid sticking and burning.
Separate the dough into 10 biscuits. Press or roll each biscuit to form a 5-inch round. Sprinkle chili powder evenly over biscuits.
Place 1 biscuit, chili powder side up, in the waffle maker. Sprinkle 1 rounded tablespoon of cheese evenly over the biscuit in the waffle maker and top with 4 to 5 jalapeño slices. Sprinkle another 1 rounded tablespoon of cheese evenly over jalapeños. This creates layers of flavor and even distribution. Top with another biscuit round, chili powder side down.
Close the lid of the waffle maker and bake for about 2 minutes or until golden brown. Carefully remove the waffle. Repeat with remaining biscuits, cheese, and jalapeño slices.
Top the waffles with salsa, sour cream, and green onions to your taste. Serve and enjoy!
Leftover Jalapeño Cheddar Waffle Melts make a great lunch or snack the next day! Be sure to store leftovers within 2 hours of finishing preparation.
