Everything Bagel Seasoning: This popular seasoning brings all the flavor! It’s a total game-changer for breakfast sandwiches and sets this recipe apart from drive-thru options. These hearty, freezer-friendly breakfast egg sandwiches come together with just a few simple steps. Check out the full recipe below!
Start by scrambling up 5 eggs in a nonstick skillet, then stir in shredded cheddar cheese and savory pork sausage crumbles.
Peel each biscuit partially in half to create a deep pocket. We found that if you press down on the bottom half of the biscuit with your fingers or thumb to make an indentation, it makes it easier to fill with the egg mixture and holds better before you seal everything up.
Carefully fill your biscuit “pocket” with some of the egg mixture and gently stretch the dough over it to cover. Press firmly around the edges of the biscuit to seal it shut.
Brush the top with egg wash, sprinkle generously with everything bagel seasoning, and pop in the oven until they’re golden and the biscuits are cooked through. Enjoy them warm from the oven or put them in the freezer and reheat them in the microwave when you want a fast, hearty breakfast.
These biscuit sandwiches are perfect for prepping ahead and reheating for a quick, satisfying breakfast anytime you need it.
If you’re planning to enjoy your everything bagel biscuit bombs in a day or two, you can just store them in the fridge in an airtight container, up to 2 days. Reheat in the microwave on high for 1 1/2 minutes, or until heated through.
Transfer to a cooling rack and refrigerate until cool, about 45 minutes. Then, wrap each cooled biscuit tightly in a layer of plastic wrap, then a layer of foil. Transfer to a large, resealable food storage freezer bag and put in the freezer.

Heat oven to 350°F. Line large cookie sheet with cooking parchment paper or spray with cooking spray.

In medium bowl, add 4 of the eggs; beat well with whisk. In 10-inch nonstick skillet, melt butter over medium heat; tilt pan to coat. Pour in beaten eggs; cook 1 1/2 to 2 1/2 minutes, stirring occasionally, until eggs are firm but still moist.

Remove from heat; stir in cheese until melted. Add sausage crumbles, and stir mixture well; cool 5 minutes.

Separate dough into 8 biscuits; let stand 5 minutes.

Gently pull biscuit partially apart, leaving bottom and lower sides intact, forming a deep pocket. Place 1/4 cup egg mixture inside, pressing inside to fit.

Gently stretch dough over filling, pressing and firmly sealing around edges of biscuit. Reshape into a round, and place on cookie sheet. (Biscuits will be full.) Repeat for remaining biscuits.

In a small bowl, add remaining egg and the water; beat well with whisk. Brush egg wash mixture on top of each biscuit. Sprinkle tops of biscuits evenly with bagel seasoning.

Bake 18 to 22 minutes or until biscuit tops are golden brown and inside mixture is heated through. Serve immediately.

When pinching together the edges of the biscuits, press firmly together with your fingertips. Otherwise, it may come apart as it bakes.
You can replace the sausage crumbles with chopped ham or chopped cooked bacon!
