With warming spices and seasonal pears, this Fall Pear Galette is the perfect cozy dessert for when the nights get cooler. Made with Pillsbury™ Pie Crust, a galette is simpler than ever to prepare and approachable for bakers of any experience level. The recipe is simple, low-prep, and ideal for any fall parties, Thanksgiving celebrations, and special occasions. Gather your friends, family, and loved ones around this superb seasonal treat.
This recipe comes together with only three ingredients. Get to know them and their roles before you begin.
Pillsbury™ Pie Crusts: These ready-made pie crusts are extremely easy to work with, making the whole process extra simple. Plus, each galette only requires one of the two crusts in a package, so you’re free to make two if you want!
Pears: The smoky sweetness of pears makes this dish a little extra cozy. The riper your pears are, the less time your galette will take. If desired, you can swap pears for apples with approximately the same cooking time.
Cheese: Cheese cuts the sweetness in the galette and makes everything a little extra creamy. We suggest Brie for an extra cheesy option or pepper Jack if you want a bit of spicy and sweet flavor.
Unroll a room-temperature crust on a lightly floured work surface. Roll into an 11-inch round, and place on a sheet pan. Sprinkle cheese over the crust, leaving a 1-inch border around the edges.
Toss pears with lemon juice, nutmeg, brown sugar, and flour. Mound pear mixture into the center of the crust, leaving a 2-inch border around the edges. Fold edge of crust over pears, pressing gently to seal (center will be exposed).
Bake the galette at 400°F for 30 minutes or until the crust is lightly browned. Remove the galette from the sheet pan and cool on a cooling rack.
Heat granulated sugar over medium heat for about 5 minutes, stirring frequently, until sugar is dissolved and the mixture is golden. Remove from heat and drizzle caramelized sugar over the galette.
Use these methods for storing and reheating your Fall Pear Galette.
You can store any leftovers in an airtight container in the refrigerator for up to 1 day. The pie crust and caramel will become soggy after that length of time.
We do not recommend storing the Fall Pear Galette in the freezer.
To reheat the Fall Pear Galette, put it in a 400°F oven for 5 to 8 minutes. You can microwave on High for 1 minute instead, but the crust may become a little soggy.

Bring crust to room temperature by removing outer package and placing on your counter for 15 minutes. Heat oven to 400°F. Line 15x10x1-inch sheet pan with parchment paper; spray with cooking spray.

Remove pie crust from pouch; unroll on lightly floured work surface. Roll into 11-inch round; place on sheet pan.

Sprinkle cheese over crust, leaving a 1-inch border around the edges.

In large bowl, toss pears with lemon juice and nutmeg. Add brown sugar and flour; toss gently.

Mound pear mixture on center of crust, leaving a 2-inch border around the edges. Fold edge of crust over pears, pressing gently to seal (crust will not cover pears in center).

Bake 30 minutes or until crust is lightly browned (filling may leak slightly during baking). Remove galette from sheet pan and cool on cooling rack.

In 1-quart heavy saucepan, heat granulated sugar over medium heat about 4 minutes, stirring frequently, until sugar is dissolved. Cook and stir 1 minute more or until golden. Remove from heat.

Drizzle caramelized sugar over galette.

Serve each slice of your Fall Pear Galette with a scoop of vanilla or cinnamon ice cream.
Sharp cheddar cheese is aged longer and has a more intense flavor than mild or medium cheddar cheese.
Anjou pears are great when you are looking for a pear that will hold its shape. Barlett pears are a good option when you want a softer texture.
